A Family Tradition
The founder of Cervantes New Mexican Restaurant and more recently, Cervantes Food Products, is a descendent of Spanish immigrants who first settled in this area more than 200 years ago.
As a youngster, Roberta began pursuit of her dream of developing a ‘very special and unique kind’ of New Mexican cuisine which would combine the best features of all the influences found here -Native American, Mexican, and Northern European – as well as the Old World Spanish traditions her family had cherished for generations.
The result is a traditional kitchen which has been serving New Mexicans for more than thirty years.
Every morsel of food is made fresh each day and only from the finest products available and every dish is prepared after it is ordered. The preparation might require a bit more time than you are accustomed to, but the results are well worth it.
The Cervantes reputation for using only fresh ingredients grows just as our time-honored recipes remain the same. Nothing we serve, not even Cervantes tortillas, contain animal fat of any kind. Likewise, we scorn the use of preservatives, artificial or otherwise. The result is what many critics and customers alike believe to be the best New Mexican food available!
